Hey guys!
If you follow me on Instagram you know I'm doing the Whole30 diet this month and I've been experimenting with grain, dairy, sugar and legume free meals. Last night my sister Larissa came over (she's doing the diet with me) and we made this awesome macadamia nut crusted halibut with salsa and mango.
I've had a few ask for the recipe and I didn't really measure anything so take it for what it's worth. :)
Ingredients:
Small piece of halibut
Handful of macadamia nuts
1 egg
Pinch of salt
Salsa of your choice for topping (I would have done mango salsa but it usually has added sugar and that's not Whole30 approved)
1 mango cut up
Here's what you do:
- Preheat the oven to 400 degrees
- Process or blend macadamia nuts until they're a good smooth texture for coating the fish
- Mix a pinch of salt into the macadamia nuts and set aside
- Beat the egg in a bowl
- Dip the halibut in the egg and then coat it with the macadamia nut mix
- Wrap the halibut in aluminum foil and and leave an opening in the top
- Bake in a glass dish for 20 - 25 minutes
- Check to see if it's nice and flaky before you take it out of the oven
- Top with salsa and mango
- Enjoy!
If you're not on the Whole30 diet, add a lil' fresh parmesan cheese to the macadamia nut mixture... :)

Clean "Doritos"
I used to love Doritos but now I can barely handle the artificial flavors and msg, not to mention all the hydrogenated oils and preservatives. You get it, right? Doritos = NOT healthy. DO NOT EAT... Ok, my rant is over.
Now to the good part.
A few years ago when I had committed to eating healthier I had a craving for that cheesy, crunchy corn chip I conjured up this recipe and it satisfied that craving in a snap. Even my picky husband loves them! Bonus: It's an easy recipe, because duh, I don't deal well with complicated recipes.
Here it is, step by step.
Clean Eating "Doritos"
Ingredients:
1 bag sprouted corn tortillas - (a healthier and more digestible version of the typical corn tortilla)
1/3 cup nutritional yeast
1/4 cup coconut oil (melted)
1/2 tbs garlic powder
1/2 tbs onion salt
1/4 cayenne powder *optional if you want a spicy kick
Here's what to do:
Cut the tortillas in quarters
Lay the tortillas out on a baking sheet and bake at 350 degrees for 10-15 minutes until tortillas brown slightly.
While the chips are baking, mix together nutritional yeast, garlic powder, onion salt and cayenne.
Place chips in a bowl to cool.
After the chips have cooled, drizzle the melted coconut oil on top and mix well until all the chips are covered.
Sprinkle the spice mix on the chips and toss well so you can get the mix spread onto both sides of each chip. Mmmmm...
I just pack mine up in a ziplock bag and snack away!
Enjoy!

Scenes from Recent Workouts, Food and Other Randoms.
Outside running in the fall is the best!
Been hitting the gym early the past couple weeks and I'm loving it! It makes my whole day better.
This past Saturday may have been my last run in the canyon with pretty leaves. They're falling fast:(
Our friends invited Eric and I over last week for an amazing lamb feast! It was so wonderful!
The party really got started when I busted out the raw milk
People make me great food. I think it's cause I just send it into the universe that I would like people to make me food, but mostly it's because I just ask them to make me food. Eric raked our neighbors leaves and she brought us chicken tamales, thanks Eric, and thanks Manuela! Larissa made us chicken chili and cornbread last week and fajitas this week! She rocks. Eric did make her & Jason chicken enchiladas last night. Yay for a husband that cooks!
Side note: Larissa and I decided that it's just as hard cooking for 4 as it is for 2 so we've been switching off cooking for each other... well I guess Larissa and Eric have been doing the switching. :)
Random picture of me at my friends house last weekend. I wanted to remember this comfy outfit I wore that night. Cozy warm tights with a t-shirt dress, leather jacket and boots. Once again Eric made dinner, parmesan chicken peas and brown rice with avocados and Cholula.. mm!
After a long day of work last week my coworker gave me the lemon tart from a gourmet bakery he had visited that day. Thanks Ryan! It made all my lemon tarty dreams come true.

Things That Make Me Happy
This guy:
I can't forget all these ladies either. I've always been so close to my cousins. They're like sisters to me.
Eric is the best! I'm amazed everyday with the amount of patience he has with me. Plus, he makes me laugh.. A lot. Such a babe.
Sisters:
I'm obsessed with these girls. They completely understand me. They know all my imperfections and love me lots anyway.
Good friends:
I've said it before and I'll say it again. Eric and I have the coolest friends! I love all of them (many not pictured), they are like family and we have so much fun together!
I also love the friends I work with. They are so awesome! They were such good sports when I had them do Zumba at a team work party. I learn so much from each and every one of them.
Good food (that somebody makes for me):
I had these fabulous CLEAN chicken enchiladas in our new Real Foods Market in Salt Lake City and they were pretty much brilliant. I love food but I really don't like making it myself. When somebody makes me food (healthy food especially), that is guaranteed to put a smile on my face.
Finishing a workout:
Whether it's finishing a long run or laying down in savasana after a good yoga class. The world seems to always be a better place and I'm able to better accept myself and be happy where I am in life.
Finishing a big race is pretty cool too!
Oh and a kombucha of course! I drank this baby last week when I had a tummy ache and it settled it within minutes. Also, french macarons... sea salted caramel might be my favorite flavor... Yummmmy!

Injuries Suck and Lettuce Wraps Don't
Uh, oh. I've got some nasty pain near my right 5th metatarsal.
I started feeling it right after I finished running the Timp half in July and it's been off and on light pain until immediately after I crossed the finish line of the St. George Marathon 10 days ago. Since then the outside of my right foot has ached by the end of the day and anytime I stand or walk for longer than 5 minutes.
Injuries suck but as a runner, it's really hard to avoid them.
I just hope it's not something serious. I should probably get it checked out ASAP. Until I get it figured out it's going to have to just be yoga, pilates and spin for me. I went to Zumba last night and wanted to die after jumping and dancing around for an hour. I knew I shouldn't have done it but I really wanted to hang out with Larissa.
Can we please talk about how cute her little bump is and how I am so proud of her for working out everyday even when she is 7 months pregnant! Go Larissa!
Tonight I made a staple in the Hansen house. Lettuce wraps. I just sauté ground turkey with mushrooms, Tamari, red wine vinegar, and Cholula. I season it with Realsalt, pepper, red pepper flakes, onion salt and ginger powder. Wrap it up in lettuce and toss some avocado on it (because I'm kind of obsessed with those amazing green veggies) and TA-DUH! Dinner!
I've probably mentioned that I hate cooking but this meal is easy and Eric and I both love it! Bonus:: it's a healthy meal too. Yay!

Sleep Deprived.
So. Tired. Bleh.
Eric made a deal with a friend and his end of the deal consisted if working out with his friend 6 days a week for 3 months. He can only miss 3 days! I'm excited for him to get into this habit! A habit that is good for his health and great for me because I get a gym buddy! It's ironic though that usually I would love to go to the gym with him at any chance but the first 2 days of his new deal I've missed out on the opportunity to be his gym buddy. Tonight I just didn't feel like I should go workout since I'm already run down. I need to rest more than workout as I rest and prep for the marathon THIS Saturday.

I wish I had some cool workouts to write about but the only thing I've done since Saturday is 10 minutes of Pilates yesterday morning before working sixteen hours (inventory day).
Sleep has not been a priority lately. I got about 5 hours of sleep last night which is terrible for me. I usually get 8-9 hours. I definitely felt it today. As soon as I got into my car to go home I started crying. Other than feeling overwhelmed at work like usual, nothing was wrong, I just needed a nap. When I came into the house Eric could tell I was sad and immediately jumped up for damage control. It wasn't long before I was asleep in my giant bed. So comfy. However, a 90 minute nap was not enough so I'll be back in bed early tonight.

Here he is leaving to the gym as I sit on the couch-I'm not exactly sure what he is mad about right here but it's probably because I'm not going with him :)
As soon as he left to the gym I ate cookies because that's pretty much all I had in my cupboard and I'm too tired to cook. I did put some brown rice in the rice cooker but it wasn't done yet.

Salads and Spinning
Work has been busy busy lately. When will it settle down?! I hope soon because my workouts have been suffering. I'm still doing some kind of workout every day (except Sundays) but my mind isn't totally invested. It's usually stuck at work or focused on some area of my domestic life I feel like I'm neglecting.
Oh yeah, and I'm running a freaking marathon in 10 days!! We'll think about that later... Like in nine days.
Yesterday I went to a spin class. I left early after 30 minutes. Not because I had to be somewhere else or was too exhausted to finish... No, the reason for my early departure was due to the very excited and very smelly neighbor spinning on my right. Every time the fan rotated towards us I thought I was going to puke. Really though, it was so bad it was making me nauseous. I didn't want to move to a bike across the room, far away from him cause he would probably have said something to me like "I don't bite... Too hard!" In front of the whole class. He was pretty obnoxious. So I just left and did some Pilates at home.
Later I ate my a new favorite dinner for the 2nd time this week.
Fresh mixed greens with salmon, pine nuts, olive oil and lemon juice. Ummm, yum! I even used canned salmon (vital choice brand) and my oh my that stuff is actually real good!
I've been trying to eat more salad. I usually don't like making salad but if it is easy, interesting and yummy then I am willing to put in a little effort.

Life Lately.
What's been happening in my life lately...

I spent a few days working in St. George last week and got to hang out with this adorable niece of mine. She turned 1 and obviously I had to give her a baby workout outfit (left pic). I about died seeing her run around in that. She's now ready to start marathon training with her auntie!
Shenelle came to Utah for a quick trip and we were too busy relaxing so this was the only pic we took. Yes, we are at Cafe Rio, but we had just finished a good workout and we were sharing a 1/2 salad. I'm obsessed with my sisters so it was wonderful having her here for a couple days!
I visited the salt mine where my favorite salt comes from. Guys:: If you don't use Real Salt - I'm not sure we can be friends;) It's so pure and way better for you than that icky "sea salt" (eh em Morton's) that's all I'm gonna say about that but the mine tour alone was so fun! We went 350 feet into the earth and the mine is entirely made of salt! If you touch any of the walls or ground around you and lick your fingers you'll taste the yummiest salt ever and I love that it is right here in Utah. How cool!
Back at the gym and started training for the St. George Marathon this week. I didn't let dental surgery get in the way of my running goals this week but one day of cross training was skipped - I was a little out of it after getting my gums cut open. I think the worst part of the surgery is this nasty mouthwash I have to use multiple times a day, oh and the swelling. I look like I'm storing nuts like a chipmunk.
Wednesday night (surgery day) I was craving bread so bad and I needed soft foods so I made up a recipe that I thought might satisfy both those factors in a healthy way... 1 banana + 1/2 cup oats + 1 egg +1 teaspoon vanilla + milk or water to desired texture blended together in a blender or food processor and cooked on a skillet = Best Pancakes Ever! Success! I added dark chocolate chips and topped with bananas and pure maple syrup. Yummy! I made this again yesterday and replaced the banana with 1/4 cup peanut butter to experiment and it was great too!
Post marathon recovery includes lots of cuddling as I rested my legs. I think Eric is a fan of the post marathon time because he is always trying to get me to slow down. When your legs are sore and you can barely walk that forces you to take it easy. It's good for me. :)
